Lactic acid bacteria (LAB) are a diverse group of bacteria known for their ability to produce lactic acid and play a major role in variety of fermentation processes. These bacteria are essential in numerous industries, including food, dairy, and pharmaceuticals, due to their beneficial properties. However, relying on the same cultures can lead to exhaustion and possible lead to gene mutation. Therefore, there is a pressing need for new LAB strain with advantageous characteristics to meet the evolving demands of these industries.
